Ruth's Holiday Ham

This is a nod to the wonderful cocktail, the Old Fashioned. These flavors with the salty sweet ham is perfect for the holiday table.

Simple, and classic with a twist: A Cherry Glazed Ham


Defrost your 99 Counties Ham two days before you plan on serving it.


Ingredients:

  • 1 ham 4-8lbs

  • 1 medium orange - just the zest

  • 2 12oz cans of Coca Cola®

  • 2oz (¼ cup) Whiskey - choose your favorite

  • 20 cocktail cherries (I love Amarena Fabbri Wild Cherries in syrup)

  • ¼ cup dark cherry juice from the cocktail cherry jar

Directions:


Preheat oven to 325 degrees.


Place ham in a baking dish. Pour one (1) can of Coca Cola® over the ham, finish with the zest of the orange (use a microplane).


Place the ham in the oven for 2 hours. Once cooked, the internal temperature should be 140 degrees. 99 Counties Hams are fully cooked, but in order to have a hot ham all the way through it takes time (about 20 minutes per pound).


Prepare the glaze. Mix whiskey, cherries and cherry juice in a blender briefly, do not fully puree the cherries. Place in a saucepan with the second can of Coca Cola®. Bring to a boil over high heat, reduce to a simmer, and cook, stirring occasionally, until thick and syrupy, about 15 minutes.


Lightly score the top of the ham with a sharp knife. Brush the glaze liberally across the surface of the ham every 10 minutes for the last 40 minutes of roasting.


At the two hour mark, remove from the oven and check the internal temperature. Allow to rest 15/30 minutes under a foil tent.


Slice and serve.
